Vinaigrette with Beetroot and Sauerkraut

 

3 medium (cooked) beets (or 2 cans of beets, drained)

3 medium (boiled) potatoes

3 medium (boiled) carrots

1/2 cup sauerkraut, drained

3 medium pickles

2-3 tablespoons of olive oil

1 tablespoon vinegar (to taste)

1 small onion, finely chopped (about 1/2 cup), red or white onion is also nice

Possibly. green peas (can also be taken from a can)

  • Peel and cut the vegetables, and mix together with oil. Add salt and pepper to taste. He's ready!

I use this salad as a snack or for lunch.

Properties:

Boiled beetroot have a low glycemic load, good for blood sugar problems. The beets contain substances that help to lower blood pressure and improve cholesterol levels. Beets have a high antioxidant value and help the liver in its detoxifying tasks.

sauerkraut is easily digestible and is therefore well tolerated by most gastrointestinal patients. Sauerkraut activates the intestinal flora and promotes bowel movements. All fermented products such as sauerkraut and organic yogurt have a pronounced beneficial effect on our intestinal bacteria.
